The Connacht Boys sides earned an excellent double over their Munster counterparts, scoring 11 tries in the process as they both triumped at Highfield RFC.
Wingers Tom Smyth and Eoin Gannon ran in second-half tries as the Connacht U-18s secured a 36-21 bonus point win, while four of the westerners' forwards - including captain Ruben Flynn - crossed in the U-19s' 41-26 victory.
Leinster's U-18 Clubs and U-19 teams also made winning starts against Ulster at Energia Park, with Chris Maguire touching down twice during the U-19s' 36-17 success.
There were braces from both Emer Purtill and Eden Waters as the Munster U-18 Girls beat Ulster 29-3 to make it two wins out of two, while Portlaoise's Mary O'Hara starred with a hat-trick as Leinster cut loose against Connacht, winning 62-19.
In the PwC Under-18 Schools Interprovincial Championship, Campbell College's Zach Thompson ran in two tries for Ulster, but Leinster fought back to draw 24-all with their visitors.
